Taste of Ecuador: Exotic Fruits Shine in Madrid

Exotic Ecuadorian fruits are making a splash in Madrid’s fine dining scene through the “Taste Ecuador” campaign, led by NEXT Ecuador and supported by the European Union. From April through early June, five top restaurants — La Tasquería, Ayawaskha, Pai Pái, Raimunda, and 1923 Cocktail Bar — are showcasing the culinary potential of fruits like yellow dragon fruit, orito banana, granadilla, Castile blackberry, plantain, and Hass avocado, blending Spanish tradition with Ecuadorian flair.

Michelin-starred chef Javier Estévez brings innovation to offal cuisine at La Tasquería with dishes like plantain toast with lamb and a bold dessert of orito and tendons. At Ayawaskha, Ecuadorian chef Miguel Ángel Méndez presents a four-course menu celebrating native flavors with modern twists — including shrimp empanadas, llapingachos with granadilla, fettuccine in dragon fruit and coffee sauce, and a rich chocolate-orito dessert. Pai Pái features a mahi-mahi ceviche with granadilla leche de tigre, Raimunda delights with salmon tartare and tropical fruits like yellow dragon fruit, and 1923 Cocktail Bar offers an Ecuadorian take on the Espresso Martini with coffee, cacao, and orito foam.

The campaign has been well received, aiming to boost Ecuador’s fruit exports by winning over European palates. As Paola Ramón from NEXT Ecuador notes, “It’s the perfect moment to show Europe the richness and versatility of our fruits.”
